Chicken Jalapeño Breakfast Pie
1 Boneless, Skinless Chicken Breast
1 Tbsp Garlic Powder
1 Tbsp Cajun Seasoning
1 Tbsp Onion Powder
Salt & Pepper to Taste
1 Cup Olive Oil

2 Idaho Potatoes, sliced
½ Cup of Jalapeno Honey Mustard

3 Eggs
½ Tbsp Cajun Seasoning
½ Tbsp Garlic Powder
Mozzarella Cheese
Wash Potatoes, fork them and place them in microwave for about 8 minutes, until soft. Set to the side. In a small skillet, cook seasoned chicken for 7 minutes on each side over medium heat, or until cooked thoroughly. Remove chicken from skillet. Add potatoes to same skillet to brown. Cut chicken and add back to skillet with potatoes. Add Jalapeno Honey Mustard. Combine eggs with seasonings and add to skillet. Add cheese and allow to cook for 3 minutes. Then place in oven for another 3 minutes or until egg is fully cooked. Garnish with parsley if desired. Serve warm.
